Western Range Cookies

Ingredients

1 c. shortening
1 c. white sugar
1 c. brown sugar
1/2 tsp. salt
2 eggs
1/2 tsp. baking powder
2 c. flour
1 tsp. baking soda
2 c. rice krispies
2 c. quick oatmeal
1 c. nuts (optional)
1 c. dates (optional)

Combine and mix in order given above. Drop by teaspoonful on greased cookie sheet. Bake 10-20 minutes at 350 degrees.

Aunt Clara's Fruit Cake

Yes, this really is from Aunt Clara. One of the few recipes that are typed out not handwritten. This is the second fruit cake recipe for the season. Pick the one you like best. This is my favorite. Mostly because it came from Aunt Clara.

Ingredients:

1 c. med. soft butter
1 c. sugar
4 med. whole eggs
3 c. flour
1 tsp. baking soda
2 tsp. baking powder
1 lb. bleached raisins
1 lb. glazed cherries
1-1/4 lb. glazed pineapple
1 piece glazed orange
1 lb. walnut meats
3/4 c. brandy

First step: Line bottom and sides of angel food pan with 2 thicknesses of brown paper and 1 thickness of waxed paper. Wrap some paper around tube of pan.

Second step: Steam raisins, drain well and combine with chopped fruit. Pour brandy over fruits and blend well. Cover tightly and allow to stand for several hours.

Third step: Cream butter, add sugar than eggs one at a time. Beat until light - about 3 minutes. Sift flour with baking powder & baking soda. Add half of dry ingredients to creamed mixture a little at a time beating until well blended. Now add fruit mixture about 1 cupful at a time alternately with the nuts. Last add rest of dry ingredients. Use wooden spoon when adding fruit and the last of the flour. Drop batter into lined pan. Press batter as you drop it into pan so that it will be solidly packed. Cover pan and bake 4 hours at 275 degrees. If not firm to the touch in the center of cake remove cover and bake about 15 minutes longer.

Frosted Delights

Another blast from the past found inside the cover of a Jelke's GOOD LUCK Vegetable Oleomargarine. Enjoy!

1/2 c. Jelke's GOOD LUCK Margarine
1 c. sugar
2 eggs
1/2 tsp. salt
1-1/2 c. sifted pastry flour
1 tsp. baking powder
1/2 tsp. vanilla extract

Cream GOOD LUCK Margarine and sugar until light and fluffy. Add the beaten eggs and sifted dry ingredients. Add vanilla and mix ingredients well. Spread the batter onto a baking sheet, spreading as thinly as possible. Frost with the following frosting.

Frosting for Frosted Delights

Ingredients:

1 c. light brown sugar
1 egg white
1 c. nutmeats, chopped

Remove lumps from the brown sugar. Beat egg white until stiff. Fold in the sugar. Spread onto the cookie batter. Sprinkle with nuts. Bake in a moderate oven, (325 degrees) for 30 minutes. Cut in squares.

Uncooked Fudge

Here's another one from the box that originated from the inside box top of a pound of Jelke's Good Luck Vegetable Oleomargarine. Pretty sure that company isn't around anymore. But I've reproduced the recipe exactly as it originally appeared inside the box.

Ingredients:

1/2 c. GOOD LUCK Margarine
3 squares bitter chocolate
1/2 tsp. salt
3 c. XXXX confectioner's sugar
5 Tbsp. evaporated milk
1 egg white, unbeaten
1 tsp. vanilla extract
1/3 c. nutmeats, chopped

Combine GOOD LUCK Margarine and chocolate in the top of a double boiler and heat until the chocolate is melted. Stir until smooth. Pour mixture into a mixing bowl. Add remaining ingredients and beat mixture until cool and thick enough to spread. Pour mixture into a shallow square pan. Allow to 'set'. Cut into squares. Yield: 25-36 squares.

Light Fruit Cake

Okay, Christmas is only two days away. There's no way to avoid posting a fruit cake recipe. This is another card in the box from another source. This one comes from the Home Service Department of The Peoples Gas & Light & Coke Company. I don't know if this Chicago based company is still around but their tag line was, 'You can do it better with gas!'

Ingredients:

1/2 c. butter
1-1/2 c. sugar
1 Tbsp. lemon peel
1 Tbsp. orange peel
1 Tbsp. citron peel
1 c. seedless raisins
1/2 c. nuts
3 c. sifted pastry flour
4 tsp. baking powder
1/2 tsp. salt
1 c. milk or water
1 tsp. flavoring
3 egg whites

Cream butter; add sugar gradually and cream again. Add finely chopped fruits and nuts and mix well. Mix and sift dry ingredients and add to first mixture alternately with milk or water and flavoring. Fold in stiffly-beaten egg whites. Bake in loaf or tube pan in moderate oven (325 degrees) for one hour. Leave sit until morning.

Filling for Pie

This one is a bit of a mystery to me. It seems to be a basic pie filling to which you can add other ingredients. But that's only a guess as what you see below is all there is on the card. Comment if you have suggestions on how to use this simple pie filling.

Ingredients:

2 eggs
1/2 c. sugar
1 Tbsp. corn starch
1 pint milk

Boil milk then add all other ingredients. Stir until it thickens.

That's all there is.

Viennese Cream Cheese Frosting

Okay, so this one is in the old recipe box but it's not original. It was cut from the back of a Domino Sugar box so I'll attribute it to them. Still a great recipe for cream cheese frosting.

Ingredients:

2 Tbsp. butter
2 3 oz. packages cream cheese
1 lb. Domino Confectioners powdered sugar
2 to 3 Tbsp. milk
1 tsp. vanilla

Cream butter and cheese together. Add sugar alternately with milk. Beat until blended. Add vanilla.

Yield: frosting for two 9-inch round layers.

Chocolate Cream Cheese Frosting
Add 2 squares unsweetened chocolate, melted.

An Awesome Pecan Pie

Here's a recipe that I didn't find in Elaine's recipe box but it's so good I want everyone to know about it. It's an incredibly easy to make Jack Daniel's Chocolate Pecan Pie. Yes, the name describes just what's in it and your friends and family will be amazed if you bake this pie for Christmas.

Nut Cups

Ingredients

Cups
1/4 lb. margarine
3 oz. cream cheese
1 c. flour

Blend ingredients and make 24 balls. Depress center to accept filling.

Filling
1 c. brown sugar
3/4 c. chopped nuts (walnuts or pecans)
1 egg
dash of salt
1 tbsp. melted margarine
1 tsp. vanilla

Mix together and put in cups. Bake at 350 degrees for 25 minutes. Sprinkle with powdered sugar.

Norwegian Mocha Cake

Ingredients

2/3 c. butter
1 1/2 c. sugar
3 eggs separated
3 tsp. baking powder
3 c. flour
1/4 tsp. salt
1 c. strong coffee

Cream butter and sugar until light and fluffy. Add egg yolks and cream. Add dry ingredients and coffee alternately to creamed mixture. Beat egg whites until stiff add to mixture. Pour into well greased cake pans. Bake in a 350 degree oven until done (about 25 minutes).

Ice Box Rolls (with potatoes)

Ingredients

1 c. hot mashed potatoes
1 c. cold water
1 c. potato water
1 scant c. melted lard
2/3 c. sugar
2 eggs
1 cake yeast

Mix potatoes, water, potato water, lard, sugar and yeast and let stand two hours. Add 1 tbsp. salt, beaten eggs and flour. Mix well to make a stiff dough and knead well. Grease top and set in ice box. Remove from refrigerator 3 hours before baking and shape into rolls or biscuits. Bake at 350 degrees until golden brown.

Ice Box Cookies (version 3.0)

Here's another one. Try them all!

Ingredients

1 c. butter
1 c. sugar
1 c. nuts or toasted coconut
1 egg
2 c. flour
1/2 tsp. baking soda
1/4 tsp. salt
1 tsp. vanilla

Mix in order and make into a roll. Put in ice box overnight. Cut into slices, place on greased cookie sheet and bake at 375 degrees for 10 to 12 minutes.

Ice Box Cookies

This is a different recipe for Ice Box Cookies

Ingredients

2 c. sugar
3 c. flour
1 c. butter
1 c. nuts (chopped almonds, walnuts, or pecans)
1 tsp. baking soda
1 tsp. cream of tartar
2 egg

Combine all ingredients in a mixing bowl and mix well. Drop by spoonfuls on greased cookie sheet. Bake at 375 degrees for 10 to 12 minutes. Store any unused dough in refrigerator and use as desired.

Ice Box Rolls

Today we might call these refrigerator rolls. But how fun is it reach back into history for a delicious roll you can enjoy now?

Ingredients

1 c. hot milk
1/2 c. shortening
2 cakes yeast
2 eggs beaten
1/2 c. sugar
1 tsp. salt
4 c. flour

Add shortening to the hot milk. Allow to cool until lukewarm. Crumble in yeast and stir until dissolved. Ad beaten eggs, sugar and salt. Beat thoroughly. Add flour and beat it all together. Let stand in warm place until it doubles in bulk. Punch it down. Put in a greased bowl, cover and place in refrigerator.

Remove from refrigerator three (3) hours before using. Let dough raise until double in bulk. Form into rolls and bake at 350 degrees until golden brown.

Simple Basic Frosting

Ingredients

1 c. sugar
1/4 tsp. cream of tartar
2 egg whites
3 tbsp. cold water
1 tsp. vanilla

Mix sugar, cream of tartar, egg whites and water using a wooden spoon. Then place over boiling water and beat 4 to 5 minutes. Add vanilla.

Pineapple Upside Down Cake

Ingredients

2 tbsp. butter
1 c. brown sugar
1 medium can pineapple slices
3 eggs (separated)
1 cup sugar
5 tbsp. pineapple juice
1 cup flour
1 tsp. baking powder

Preheat oven to 350 degrees

Melt butter slightly in heavy frying pan. Spread over the brown sugar then lay on pineapple. In a separate mixing bowl beat egg yolks, add sugar, pineapple juice, flour sifted with baking powder. Beat egg whites stiff and fold in. Pour over pineapple in the frying pan and bake for about 30 minutes.
