Banana Cookies

Note: This one is another recipe from Aunt Clara.

1 1/2 cups flour
1 cup sugar
1/2 tsp. soda
1 tsp. salt
1/4 tsp. nutmeg
3/4 tsp. cinnamon
3/4 cup shortening
1 cup mashed ripe banana
1 egg well beaten
1 3/4 cups Quaker oats
1/2 cup chopped nuts

Sift flour, sugar and all dry ingredients. Cut in shortening like for biscuits. Add egg, banana, oats and nuts. Mix well (add flour if necessary) and drop by spoonful on ungreased cookie sheet. Bake at 400 degrees for 12 to 15 minutes.

Cherry Winks

Sift together:
2 1/4 cups sifted flour
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. soda

3/4 cup margarine
1 cup sugar
2 eggs
1 tsp. vanilla
2 Tbsp. milk
1 cup chopped nuts
1 cup chopped dates
1 cup drained maraschino cherries
3 1/2 cups crushed corn flakes

Blend margarine and sugar and cream. Add eggs and vanilla. Beat well and blend in milk. Fold in sifted dry ingredients. Add nuts, dates and cherries and mix.

Drop dough by teaspoon into crushed corn flakes and toss lightly to coat and place on greased cookie sheet. Top each with 1/2 or 1/4 of a cherry. Bake at 375 degrees for 12 to 15 minutes.

Makes 5 dozen.

Baby Ruth Cookies

1/2 cup butter or other shortening
3/4 cup white sugar
1 egg
1 1/3 cups flour
1/2 tsp. soda
1/2 tsp. vanilla
1/2 tsp. salt
2 Baby Ruth bars cut small

Cream butter and sugar until smooth. Beat in egg. Stir in other ingredients. Chill and drop by half teaspoons on greased cookie sheet. Bake in a moderately hot oven (350 degrees) for 10 to 12 minutes. Makes 75 cookies.

Bread & Butter Pickles

Ingredients:

4 qts. sliced cucumbers (medium size)
6 medium onions (white)
3 cloves garlic
1 green pepper
1 red pepper
1/3 c. salt (not iodized)
3 c. white vinegar
5 c. sugar
1 1/2 tsp. tumeric
1 1/2 tsp. celery seed
2 tblsp. mustard seed

Slice cucumbers. Add onions, garlic and pepper. Add salt and cover with ice cubes. Let stand 3 hours. Drain and place in large stewpot, add vinegar, sugar, spices and bring to a boil. Place in jars and seal.

Potato Cake

Ingredients:

2 c. sugar
1 c. butter
4 eggs
2 sq. bitter chocolate
1 c. chopped walnuts
1 c. mashed potatoes
1/2 c. milk
1 tsp. vanilla
2 c. flour
2 tsp. baking powder
pinch of salt

Western Range Cookies

Ingredients

1 c. shortening
1 c. white sugar
1 c. brown sugar
1/2 tsp. salt
2 eggs
1/2 tsp. baking powder
2 c. flour
1 tsp. baking soda
2 c. rice krispies
2 c. quick oatmeal
1 c. nuts (optional)
1 c. dates (optional)

Combine and mix in order given above. Drop by teaspoonful on greased cookie sheet. Bake 10-20 minutes at 350 degrees.

Aunt Clara's Fruit Cake

Yes, this really is from Aunt Clara. One of the few recipes that are typed out not handwritten. This is the second fruit cake recipe for the season. Pick the one you like best. This is my favorite. Mostly because it came from Aunt Clara.

Ingredients:

1 c. med. soft butter
1 c. sugar
4 med. whole eggs
3 c. flour
1 tsp. baking soda
2 tsp. baking powder
1 lb. bleached raisins
1 lb. glazed cherries
1-1/4 lb. glazed pineapple
1 piece glazed orange
1 lb. walnut meats
3/4 c. brandy

First step: Line bottom and sides of angel food pan with 2 thicknesses of brown paper and 1 thickness of waxed paper. Wrap some paper around tube of pan.

Second step: Steam raisins, drain well and combine with chopped fruit. Pour brandy over fruits and blend well. Cover tightly and allow to stand for several hours.

Third step: Cream butter, add sugar than eggs one at a time. Beat until light - about 3 minutes. Sift flour with baking powder & baking soda. Add half of dry ingredients to creamed mixture a little at a time beating until well blended. Now add fruit mixture about 1 cupful at a time alternately with the nuts. Last add rest of dry ingredients. Use wooden spoon when adding fruit and the last of the flour. Drop batter into lined pan. Press batter as you drop it into pan so that it will be solidly packed. Cover pan and bake 4 hours at 275 degrees. If not firm to the touch in the center of cake remove cover and bake about 15 minutes longer.
