Almond Honey Cookies

1/2 cup honey
3/4 cup sugar
1/2 cup water
2 eggs separated
6 cups uncrushed cornflakes
2 cups flour (sifted)
1/2 tsp. baking soda
1/2 tsp salt
3/4 cup melted shortening
1 tsp. almond extract
1 cup chopped almonds

Cook honey over direct heat until it changes color to a golden brown. Add sugar and water and bring to a full rolling boil. Do not stir. Remove from heat and beat hot liquid into egg whites which have been beaten stiff. Stir in cornflakes. Add flour sifted with soda and salt and blend lightly. Stir in the beaten egg yolks, shortening, flavoring and nuts. Do not crush the cornflakes more than is necessary. Drop by spoonfuls onto ungreased cookie sheet. Bake at 350 degrees for 13-15 minutes. Makes four dozen large cookies.
