Light Fruit Cake

Okay, Christmas is only two days away. There's no way to avoid posting a fruit cake recipe. This is another card in the box from another source. This one comes from the Home Service Department of The Peoples Gas & Light & Coke Company. I don't know if this Chicago based company is still around but their tag line was, 'You can do it better with gas!'

Ingredients:

1/2 c. butter
1-1/2 c. sugar
1 Tbsp. lemon peel
1 Tbsp. orange peel
1 Tbsp. citron peel
1 c. seedless raisins
1/2 c. nuts
3 c. sifted pastry flour
4 tsp. baking powder
1/2 tsp. salt
1 c. milk or water
1 tsp. flavoring
3 egg whites

Cream butter; add sugar gradually and cream again. Add finely chopped fruits and nuts and mix well. Mix and sift dry ingredients and add to first mixture alternately with milk or water and flavoring. Fold in stiffly-beaten egg whites. Bake in loaf or tube pan in moderate oven (325 degrees) for one hour. Leave sit until morning.
