Pineapple Upside Down Cake

Ingredients

2 tbsp. butter
1 c. brown sugar
1 medium can pineapple slices
3 eggs (separated)
1 cup sugar
5 tbsp. pineapple juice
1 cup flour
1 tsp. baking powder

Preheat oven to 350 degrees

Melt butter slightly in heavy frying pan. Spread over the brown sugar then lay on pineapple. In a separate mixing bowl beat egg yolks, add sugar, pineapple juice, flour sifted with baking powder. Beat egg whites stiff and fold in. Pour over pineapple in the frying pan and bake for about 30 minutes.
